Vegan Banana Nut Bread
Ingredients:
1 ½ (300g) cups ripe bananas
⅓ cup (65g) vegetable or coconut oil
1 ⅓ cup organic brown sugar*
⅓ cup (80g) almond milk
1 ¾ cup (265g) all purpose flour
1 tsp. cinnamon
1 ½ tsp. (7g) baking powder
1 tsp. (6g) baking soda
1 tsp. (3g) vanilla extract
½ tsp. (2g) salt
1 cup (100g) chopped toasted walnuts (optional)
Instructions:
Preheat the oven to 350 degrees Fahrenheit.
Start by mashing 2 very ripe bananas and set aside.
In a medium bowl combine the all purpose flour, salt, baking powder, baking soda, and cinnamon. In a small bowl combine the organic brown sugar and oil, then add the mashed banana and milk, followed by the vanilla extract.
Fold the flour mixture into the banana mixture, just until combined. Fold in the toasted walnuts and pour into a heavy greased 9×5 inch loaf pan.
Bake for 45-50 minutes, until a skewer poked in the center comes out clean. Remove the pan from the oven and let cool for 10 minutes before popping it out onto a cooling rack. You can enjoy this bread warm from the oven with a little vegan butter, it’s delicious! Store the bread in an airtight container in the fridge for up to 5 days. You can freeze the loaf for up to a month.
*Granulated sugar is not vegan, be sure to use certified organic sugar.
