Valentine’s Day Chocolate Cookies

Makes 12 cookies

Ingredients

½ cup or 1 stick (115 g) room temperature unsalted butter
½ cup (115 g) lightly packed brown sugar 
⅓ cup (75g) granulated sugar 
1 tsp. (6g) vanilla extract 
1 egg + 1 yolk room temperature 
1 cup (150g) all purpose flour 
⅓ cup (30g) cocoa powder
½ tsp. (2g) salt
½ tsp. (3g) baking soda
1 tbsp. (2g) Espresso powder (optional)
½ cup (90g) milk or semi-sweet chocolate chips
1 cup (160g) cupid m&m’s

Instructions:

Preheat the oven to 375ºF.

Step 1: Make Cookie Dough
In the bowl of a stand mixer, beat the sugars and butter until light and fluffy, about 3 minutes. Add the egg and beat until mixed in. Add the vanilla and espresso powder and mix. 

In a separate bowl combine the flour, cocoa powder, salt, and baking soda. Slowly incorporate the flour mixture into the sugar mixture and mix just until combined. Fold in the chocolate chips, and ¾ cup of the m&m’s, save the rest to place on top of each cookie.  

Step 2: Bake Cookies

Using an ice cream scoop, scoop rounds of cookies on a cookie sheet lined with parchment paper. Gently flatten the tops of each cookie with the palm of your hand. Top each cookie with a few m&m’s. Bake in a 375 degree oven for 9-11 minutes. 

Allow the cookies to cool on the cookie sheet for 3 minutes, then carefully transfer them to a cooling rack. 

Store in an airtight container for 3 days.
