Ice Cream Sandwiches
Ingredients:
Cookies
Ice Cream
Chocolate chips
Coconut Oil
Instructions:
Bake your favorite cookies. While the cookies are cooling on the cookie sheet after being baked, use a large round cookie cutter to cut away the edges. This will give the cookies a uniform shape. Let cookies cool completely.
Melt Chocolate:
Add 1 cup of chocolate chips to a microwave safe bowl, I prefer using a glass bowl for this. To the chocolate chips add 1 tsp. Coconut oil, or any vegetable oil you have on hand. Place the bowl in a microwave and set for 45 seconds. Take a bowl out and mix chocolate for about a minute. Then place back in the microwave for intervals of 10 seconds until the chocolate is melted and drizzly. If the chocolate is too stiff, add ½ tsp. of coconut oil to the chocolate and mix it.
Dip outside of the cookie into the melted chocolate coating the outside. Place the chocolate side down on a cookie sheet lined with parchment paper. Once all cookies are coated with chocolate, place the cookie sheet in the freezer for 10-15 minutes.
Assemble:
Scoop out ice cream into a bowl and mix with a spoon or mini spatula until it is smooth like soft serve, then once cookies are set, scoop a good amount of ice cream on one cookie and carefully press another cookie on the top of the ice cream to create a sandwich. Place all cookies back on cookie sheet and in the freezer for 1 hour. Remove cookies from the freezer after an hour and wrap each one individually in plastic wrap and chill for another 2 hours then enjoy.
