French Toast Bread Pudding
Ingredients & Measurements:
8 cups leftover bread rolls (Brioche or Challah will work)
4 eggs
2 cups whole milk
½ tsp salt
1 tbsp. cinnamon
1 tsp. vanilla extract
¾ cup sugar
Fresh grated nutmeg
Toppings:
Fresh berries
Powdered Sugar
Maple Syrup
Instructions:
Preheat your oven to 350 degrees F.
Cut the bread into 1 inch cubes, set aside. In a large bowl whisk the eggs with the milk, then add the sugar, salt, vanilla extract, cinnamon, and nutmeg.
Butter a 9×13 inch baking dish and layer the bread evenly in the dish. Top with the egg and milk mixture, be sure each piece of bread is coated in the egg mixture. Bake for 1 hour, until the center is set and the bread is golden brown.
Serve right away, top with your favorite berries, powdered sugar, and maple syrup.
Store in the refrigerator for up to 3 days. To reheat, place in microwave for 1 to 2 minutes.
