Super Simple and Delicious Apple Galette
Apple Galette
Ingredients
Crust:
1 3/4 cups (234g) all-purpose flour
2 tsp. (10g) sugar
1 tsp. Vanilla extract
½ tsp. (3g) salt
10 tbsp. 134g) cold unsalted butter (cut into small pieces)
⅓ cup ice water or more depends on humidity
Topping:
4 apples, I prefer granny smith
2 tbsp. (38g) sugar
1 tbsp. (15g) lemon juice freshly squeezed
1 tsp. (2g) Cinnamon
½ tsp. Cardamom
1 tbsp. (26g) honey or maple syrup
Pinch of salt
1 tbsp. (20g) unsalted butter (cut into small pieces)
Directions
Step 1: Make the Dough
You can make the pastry dough by hand or in a food processor.
Food Processor: Place flour, sugar, and salt in the food processor. Add butter and pulse a few times. Run the processor while you drizzle the ice water, the dough should come together into a rough ball. Stop the processor and pour dough out onto a flat surface and bring it together into a disk.
By hand: In a medium bowl mix the flour, sugar, and salt. Add the cold cubed butter and using a fork, pastry blender or your fingers quickly work the butter into the flour. Try to do this fast to avoid warming the butter too much with your fingers. You are looking for pea sized pieces of butter throughout the flour. Add the ice weather 3-4 tbsp at a time, roughly mix the dough with a spatula, once all the water has been added to the dough, pour it out onto a flat surface and quickly bring the dough together into a disk. You do not want to mix the butter completely into the dough, you want to see specks of butter throughout, this will create a flaky crust.
You can wrap the dough in plastic wrap and store in the refrigerator until you are ready to use it or you can use it immediately.
Step 2: Prep the Apples
Wash and dry apples. You can choose to peel the apples, but since this is a rustic type of galette I opted to leave the skin on. Slice your apples to the thickness you want, I try for ⅛ of an inch or so thick. As I slice the apples I add them to a bowl and sprinkle them with a tiny bit of lemon juice to help stop them from turning brown. Once the apples have been sliced, add the remaining lemon juice and quickly toss them.
Step 3: Assembly
Preheat the oven to 400° fahrenheit .
On a lightly floured work surface, roll out the pastry to a 12-by-14-inch rectangle or circle and transfer to a large rimmed baking sheet.
Strain your apples to remove any excess liquid, I used granny smith apples which tend to not release a lot of liquid. Place apples back in the bowl and drizzle with maple syrup or honey and quickly mix with a spatula to distribute the syrup or honey over all the slices,
Begin laying and layering the apple slices in any shape you like leaving about a 1 inch border edge of dough. Once you have placed all the apple slices, fold the excess dough onto itsent to create a crust.
Mix the sugar, cinnamon, cardamom, and salt. Sprinkle all of the apples with the sugar mixture. Dot the apples with pieces of the tablespoon of butter.
Step 4: Bake
Bake galette for 45 to 50 minutes. You want the crust to be golden brown on the edges and for the bottom to be cooked and golden brown as well.
You can test the bottom by using a fork or spatula to gently lift one side of the galette while you look at the bottom.
Step 5: Enjoy
Allow the galette to cool on the pan for 5 minutes then transfer to a cooling rack. This will help keep the crust nice and flaky, not soggy.
You can enjoy the galette just like it is or add some delicious maple and lemon whipped cream or a scoop of vanilla ice cream.

I love making galettes. They are super easy and delicious. They are versatile in shape and fillings. This recipe is a quick and easy way to use up some apples you have lying around. The crust is very easy to make, and only requires 5 ingredients one of which is water.
One key thing is that the butter and the water must be very cold. To make a flaky crust or pie dough you need to use very cold butter and iced water. When the dough bakes in the oven the specks of cold butter will create the layers and flaky crust we all love!
You can make this dough much quicker if you use a food processor but can easily make it with the best tools in the kitchen, your hands! There is just something about using your hands to make something that is so satisfying.
You can make the dough a day or two in advance and pull it out when you want to make this recipe. You could use store bought pie dough, but I really do hope that you try to make it yourself. Once you do, you won’t go back!
You can use this simple dough for a variety of pastries like pies, hand pies, pop tarts, etc.
I had this with my morning coffee but have also made it for a dessert and topped it with vanilla ice cream. I also thought about making a maple and lemon whipped cream, maybe next time.
