Peach Galette
Ingredients & Measurements:
2 cups frozen peaches
⅓ cup brown sugar
1 tsp. ground cinnamon
1 tsp. vanilla extract
⅛ tsp. Salt
Store bought pie crust (1 sheet)
Egg Wash:
1 egg beaten
1 tsp. granulated white sugar
Optional:
Vanilla Ice cream to serve
Instructions:
Preheat oven to 400 degrees F.
Thaw out 1 sheet of frozen pie crust. Roll crust out into a round shape. Place rolled out pie crust on a cookie sheet. Using a fork, poke a few holes into the crust, this will prevent the crust from bubbling up while baking.
In a medium bowl combine the peaches, brown sugar, cinnamon, salt, and vanilla extract. Mix to combine. Pour peach mixture onto unbaked pie crust. Spread peach mixture evenly leaving about an inch border of crust. Fold the pie crust over onto itself to form the crust holding in the peaches. Brush the edge of the crust with egg wash and sprinkle granulated sugar on crust. Bake for 26-30 minutes until bubbly and golden brown.
Remove from oven and let cool in pan on a cooling rack. The frozen peaches will release a lot of liquid, be careful as this is very hot. Let cool for 15-20 minutes then cut and serve with vanilla ice cream.
