Apple Fritters
Makes 12 miniature apple fritters

Recipe:
For the Apples:
3 tbsp (50g) unsalted butter
1.5 cups (260g) 3 small granny smith apples, cut into bite size pieces.
2 tbsp. (24g) brown sugar
1/2 tsp. (2g) vanilla extract
1/8 tsp. salt
1/2 tsp cinnamon
For the Dough:
1 1/2 cups (230g) all purpose flour
1 3/4 tsp. (8g) baking powder
1 tsp salt (3g)
1 tsp. (2g) cinnamon
1/8 tsp fresh nutmeg
1 egg room temp
1 tsp. (4g) vanilla extract
1/4 cup (53g) dark brown sugar
2 tbsp. unsalted butter
1/2 cup (6oz) sparkling apple cider/ginger cider
3 cups (24oz) vegetable oil for frying
For the Glaze:
3 cups (190g) powdered sugar
1/2 tsp. (1g) cinnamon
1/4 tsp. nutmeg
1/4 tsp. salt
1 tsp. (4g) vanilla extract
3-5 tbsp. (45-70g) sparkling cider/ginger cider
Directions:
Step 1: Cook the Apples
Peel, core, and chop apples into bite sized pieces, try to make sure they are similar in size. In a saucepan over medium high heat, brown the 3 tbsp. of butter then add the apples, brown sugar, vanilla extract, salt, and cinnamon stir to combine. Cook on medium high for 6-7 minutes. Remove from heat and set strainer over bowl, pour apples into strainer and let them sit for 5 minutes.
Step 2: Heat Oil
Heat Oil in a large heavy lined sauce pan until it reaches 375 degrees. While the oil is heating up move on to the next step.
Step 2: Make the Dough
In a small bowl melt the 2 tbsp of unsalted butter and let it cool for a few minutes. In a medium sized bowl whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside. In a large bowl whisk the egg, 1/4 cup brown sugar and melted butter. Add the apples and cider and mix just to combine. Slowly incorporate the flour, do not over mix.
Step 3: Fry the fritters
Once the oil has reached 375 degrees, spoon the batter into the oil carefully cooking in small batches. Fry on both sides for about 2 minutes. Carefully flip fritters over using a slotted spoon or fork. Transfer fritters to a plate lined with paper towel to catch the grease. Let the fritters cool for a few minutes before glazing.
Step 4: Make the Glaze
While the fritters cool, make the glaze. In a medium sized bowl mix the powdered sugar, spices, salt, and vanilla extract then slowly incorporate the cider until you get a smooth consistency.
Step 5: Glaze the fritters
Dip each fritter into the bowl of glaze and turn over once, using a fork pick up the fritter and allow the excess glaze to drop off. Place glazed fritter on a cooling rack. Allow glaze to set for an hour and enjoy!
To store, these do not store well in an airtight container, they will get soggy. These are best enjoyed the day of, but you can keep them on a plate loosely covered with a napkin for a day or two.
