Boo! Brownies

Recipe Notes: Makes 12 large brownies or 24 small brownies

Ingredients & Measurements
Brownies:
2 boxes of Ghirardelli Triple Chocolate Brownie Mix
⅔ cup vegetable oil
⅔ cup coffee cooled
2 eggs

Ghost Icing
1 cup (125g) powdered sugar
½ tsp. salt
½ tsp. vanilla extract
3-4 tbsp. Water


Instructions
Step 1: Make the Brownies
Follow the directions on the back of the box of brownie mix, replacing the water with cooled coffee. 

Step 2: Bake and Cool Brownies
Prep a 9×13 inch baking pan with a parchment sling, this will make it easier to remove the brownies from the pan once they have cooled. Bake brownies in a 325 degree F oven for 50-55 minutes. You want to bake them until they are completely set. Remove from oven and allow to cool in the pan on a cooling rack for at least 1 hour. 

Step 3: Make Ghost Icing
In a medium bowl combine the powdered sugar, salt, and vanilla extract mix together then incorporate the water until you achieve a spreadable consistency.  You do not want the icing to be drizzle consistency, instead like softened butter. 

Step 4: Cut and Decorate Brownies
Remove the brownies using the parchment sling and place on a cutting board. Cut into 12 equal squares. You may need to clean your knife between cuts to have nice clean squares.

To decorate, using a small spoon or a small rounded off-set spatula, take a good amount of icing and gently press onto the center of a brownie and then pull down to create the ghost.

After adding all of the ghosts, take the leftover icing and add a little water to thin it out so you can pipe the eyes. Then add black food coloring to the icing and using a piping bag or a small zip lock bag with a hole, pipe the eyes and mouth on each of the ghosts. Or you can use small round black sprinkles to make the eyes and mouth.
Let the ghosts set and then enjoy!

Store brownies in an airtight container on the counter for up to 5 days.
