Apple Fritter Bread

Ingredients & Measurements
Bread
1 ½ cup (230g) all purpose flour
⅔ cup (140g) granulated sugar
¾ cup unsalted brown butter
2 whole eggs, room temperature
2 tsp. (10g) vanilla extract
1 tsp (5g) salt
2 tsp. (9g)  baking powder
½ cup (113g/8oz./120ml) milk 

Apple Filling
2 ½ cups (300g) apples, peeled, cored and chopped into bite size pieces
1 tbsp. (5g) ground cinnamon
1 tbsp. (14g) brown sugar
¼ tsp. salt

Cinnamon Sugar Topping
⅓ cup (60g) packed brown sugar
2 tsp. (2g) ground cinnamon

Apple Cider Glaze
1 cup (125g) powdered sugar
2-3 tbsp. (90g) apple cider
½ tsp. (1g) salt

Instructions
Step 1: Brown Butter and Preheat the oven to 350 degrees F or 176 degrees C

Place ¾ cup unsalted butter in a pan, place over a medium heat and cook until browned. This process can take 4-6 minutes. Be very careful and constantly stir to avoid the butter from burning. As soon as you begin seeing brown bits and start smelling a toasty caramel smell, it’s done. Remove from heat and transfer to a heat safe bowl. If you are using a stand mixer, you can transfer the butter to the bowl of the stand mixer. Allow the butter to cool for 10-15 minutes before using in the recipe. 

Step 2: Make Bread
While the butter cools, work on the dry ingredients. In a medium bowl combine the flour, baking powder, and salt. Mix to combine.

To the butter add the sugars. Mix for 3 minutes until light and fluffy. Add eggs, one at a time and mix after each addition. Add vanilla extract and mix in. Mix the flour in two batches, mix just until combined. Add the milk, and mix to combine.

Set this aside and work on the apple filling.

Step 3: Make Apple Filling
Wash, peel and core apples. Slice into bit sized pieces. Place apple chunks in a medium bowl and sprinkle with cinnamon, brown sugar, and salt. Mix to combine.

Step 4: Assemble Bread
Prepare a 8×5 loaf pan by spraying the bottom and sides with non-stick cookie spray. Pour half of the bread mixture into the loaf pan. Then top with half of the apples. Top the apples with the rest of the bread mixture. Then top the bread mixture with the rest of the apples, pressing the apples down slightly into the bread.

Step 5: Cinnamon Sugar Topping
Combine the 1 tbsp of cinnamon with the 1 tbsp of granulated sugar and sprinkle on top of the apples. 

Step 6: Bake Bread
Bake on the center rack at 350 degrees F or 176 C for 55-65 minutes. Check cake for doneness around the 45 minute mark, continue to bake and check every 5 or so minutes until it is cooked through. You will see the center puff up slightly and it will be set. The apples will create a lot of moisture so this bread will not rise like other breads. You can do a quick test by sticking a toothpick or bamboo skewer in the center and if it comes out with minimal crumbs, it is set.

Remove the loaf from the oven, and allow it to cool in the pan for 15 minutes, then carefully turn it out onto a cooling rack and allow to cool for another 30-40 minutes. Once the bread is completely cooled you can drizzle with the glaze. 

Step 7: Make the Glaze and Drizzle on the Bread
In a medium bowl, combine the powdered sugar and salt. Then add the apple cider and mix until you reach a drizzle consistency. Then drizzle on the top of the cake and allow it to set for 30 minutes. Then enjoy!

Store the bread in an airtight container in the refrigerator for up to 5 days.
